Pea and Ham soup
Not a make before dinner meal, but very easy...
2 kg yellow split peas, Soak them over night...(some people wash them before or after this, but i dont bother, find the flavour is nicer without the washing)...
Now this bit is variable....
either 500g Baon diced up and 4 bacon stockcubes or 1.5 kg of bacons bones....
An onion diced up, or 3-4 spring onions(shellots)...
Place all ingredients in a large pot(about 8 ltr at least, I use a 12 ltr stock pot, but its a heavy one)....
and fill water till about 4cm above the peas...
bring to boil(stir occassionally) and once boiling, put either a fry pan or one of those things that helps cut down the amount of heat to your pot...
Keep this at a low simmer, for about 3 hours, while stirring occassionally...You need to keep the heat low, just enough to keep it cooking, and you may need to add a little water to stop it getting so thick you cant stir it...
Once its cooked for 3 hours, then cover it and leave it overnight...
Next day it will be like concrete, you will need to heat it slowly while stirring, then once hot, start eating...
Now this note is for the cook, do not and i mean do not taste test while cooking, that way you will be hungry enough to eat some when its done...
I do need to take my own advice, but at this stage I have never been able to refrain from testing P&H soup...
another thing is, you can spoon it into containers and freeze for those rainy days that you dont want to cook....Just dont bother with the overnight and reheat, once cooked it can be stored frozen....
Oh one other thing, if your spoon melts, then its perfect, and if you can make it stand up just by putting it into the soup, you have done it right....
Perfect meal after a hard day working in the cold, and goes good with a fire too....
