20 x 30 cm baking dish...could use a dutch oven in the bush...
enough bread to cover the dish twice....about 12 slices of bread...(I like crusts so if you dont(babies) then you will need to make the diference up with more bread)...
3x eggs
600 ml milk
teaspoon of nutmeg/cinnamon
cup of sultanas
2 x tablespoons of raw sugar(this can be skipped)
tablespoon of vanilla essence(i use anchor, cheapy, it needs heaps) so you may get away with teaspoonful....
Butter the bread, only one side...place a layer of bread in dish, then sprinkle half of the sultanas on them and half the nutmeg an cinnamon and one table spoon of raw sugar...
then another layer of bread and same again....put to the side now...
Place milk and eggs and vanilla into a saucepan and stir while warming thru, a touch warmer than tepid(thats about when you can feel the heat, not hot tho) and then take off heat...
Pour over bread mix, and press down bread with a fork, help it soak thru...
rest for a minute, then put in oven at 170 for 45 minutes to an hour until it has risen in middle and browned up(test with knife, has to come out clean(umm not runny egg mix left on it))
or on coals from fire and place coals on lid of dutch oven, same, about 40 minutes +...just watch the heat is not too much...it only needs 170 c....
If your worried about messing it up or just cant be bothered doing the hard work, then use this....buy a loaf of fruit and spice bread...

600ml milk
table spoon of vanilla essence...
butter bread, and place in dish/dutch oven(about 2/3's to the top for the dutch oven, thats about the most or it wont cook the egg custard in the middle, if you do fill and it cooks fine, let me know..)
Bring milk, egg and essence in saucepan, to above tepid heat, while whisking....
Pour over bread...push down with fork and cook according to top recipe...
Tastes yummy too....
Serve with custard or cream, or both....
