This is the recipe i use for making bread, can vary it heaps...
1/2 kilo of plain flour(500 grammes)
2 teaspoons of salt
tablespoon of butter
2 teaspoons of dry yeast(best to use for us, its cheap an easy, can also be used in a bread machine, but thats for slack ones)...
1 and 1/4 cups of tepid to luke warm water..
sift flour and salt together...
rub in butter...
sprinkle a lil sugar on water in a bowl then mix in yeast, leave in a warm place to go frothy, about 10 - 15 minutes...
pour yeast over flour and mix to a firm dough...
This bit requires it leave the edges of the bowl, it may require a touch more flour, but make sure its mixed well first, then if it still is too sticky then a pinch of flour until it does leave sides...
Turn out on floured surface(i use my dining table) and knead for about 10 mins...
Place back in bowl and cover with glad wrap until it is double in size...
Turn back out on table and knead again until it gets firm(thats kind of tough for those that are technical...lol..)
either grease 2x bread tins or a tray...
Now you can either make it into rolls, or cut in half and place in to 2x bread tins...(I use ceramic bread pans)...
Leave in a warm place to rise, to double its size again...
Then place in oven at 230 c for 25 - 35 minutes...
Check to see that the bread has left the sides of the tin and has browned on top...
You can brush with milk or egg if you wish...
once cooked, turn out onto cooling tray...
then eat, its yum warm but apparently not good for you, so i shall eat mine warm and put up with whats not good for me...
If you do rolls, then watch the cooking time, it will be a bit less...and brush with egg or milk, and if you want sprinkle on poppy seeds...
and if you do this in a dutch oven, its pretty much the same, except you need nice hot coals when cooking it, and ensure that there is lots around the oven too...
You can alter this slightly, add cheese and lightly fried bacon when you knead it the last time... and sprinkle a tiny bit of cheese on top b4 cooking...
Add cinnamon, nutmeg and fruit mix or sultanas at first kneading, and brush with warm honey/milk mix before putting in oven...
Add mixed herbs, olives(sliced thin), a little capsicum(sliced thinly) and a little fried bacon(diced)...at second kneading, and fold it in...Brush a little olive oil over top of bread and sprinkle some olives, capsicum and bacon on top too....

A nice alteration that i use...
Chelsea Buns...
2x teaspoons of Cinnamon
1x teaspoon of soft brown sugar
teaspoon of butter
half cup of dried fruit...
half cup of mixed peel...
1x egg
tablespoon of honey
Make bread mix adding an egg with the yeast, when you mix it with the flour, and when it has risen, knock it down and knead...
then roll out onto a surface, about 1cm thick...
Brush with melted butter and brown sugar
sprinkle cinnamon, mixed peel and dried fruit evenly...
and roll this up to make a log...
Cut about 4cm long each to make ? so many buns...
Place on greased tray and cover...about 2cm apart...
leave until double in size and have joined...
now cook at 220 c for 20-25 minutes...
when they come out, while hot, brush with honey....
Now you've made chelsea buns...
