Here's something a bit different to your normal mashed potato. I was originally going to have mash with my evening meal tonight but decided to jazz it up somewhat.
After the potato was ready, I made this up as I went along with what I had at hand, & it turned out very nice.
This is for 1 (one) serving. Adjust amounts for more servings.
1 large potato - cut into quarters tablespoon butter or margarine 2 cloves garlic - peeled, & crushed or finely chopped 1/2 level teaspoon dill leaf tips - tarragon leaves would also work instead of the dill (these are the herbs in the shaker jars from the supermarket, but if using fresh use 1 teaspoon finely chopped) heaped tablespoon, or a little more, sour cream. Love sour cream, so I had a little more. ;D teaspoon fresh finely chopped parsley (optional) salt & black pepper to taste
Cook potato until tender, but not falling apart. Drain water & remove potato. Put saucepan back on low heat & add butter/margarine to melt. When just melted, add herbs & garlic & stir just to combine. Cook these for about 30 seconds, add potato & crush with fork or potato masher. Turn heat up to medium low, stir to combine & leave for about 1 minute. Stir again at about 30 seconds. You can either smash the potato until just in fine pieces or fully mash. Turn heat off & add sour cream stirring to combine. Add salt & pepper to taste. Serve & top with sprinkling of parsley if desired.
